Originating from Sicily and southern regions of Italy, the Melanzana alla Parmigiana is made primarily of aubergines, cheese and tomato sauce. Each ingredient and the way it’s cooked adds something unique to make it so special.
This delicious dish is the perfect comfort food that will fill you up as well as satisfy your taste buds. Although it originates from the South of Italy, is now found throughout all parts and is a beloved favourite of the Tuscans.
Aubergines are one of the most popular ingredients in Italy and are therefore used in lots of traditional dishes. We bake part of the aubergine and fry the rest, giving it different textures and bringing out all the flavours.
We use two types of cheese: Caprino cheese (goats cheese) and Parmesan. Caprino is our secret ingredient as it adds a lovely strong flavour to the dish, making our Melanzana alla Parmigiana better than the rest. We also use a small amount of parmesan on top, because who doesn’t love parmesan?
Our rich tomato sauce is made up of fresh vine tomatoes, garlic, salt and pepper and then baked. The sauce brings the whole dish together and when combined with the aubergine, cheese, shallots, and basil is true heaven on a plate.

- 2 kilo of aubergine
- 1 Caprino (cheese)
- ½ bunch of basil
- 3 vine tomato
- 1 clove of garlic
- ½ shallot
- Salt and pepper
- 100 ml of tomato sauce
- 100 g of parmesan cheese
